Two levels, and which one wins
Labels can be set on a service line so every service under it inherits them. Where one service runs a different process, it takes its own labels and those beat the inherited ones.
A stage with no custom label shows its standard name. You do not have to name all nine — only the ones your team genuinely calls something else.
A custom label is not translated
The nine canonical stages exist in both languages and follow the reader's.
A label you write is the name of your process, and it is rendered verbatim in every language.
